Recipe of the Week - Melting Moments

I love the filling inside melting moments. I love the texture of the biscuit and how it melts in your mouth. They're definately one of my favourites.

You Will Need..
For the Biscuit
For the Filling
Plus 1 Teaspoon Pink Food Colouring
Preheat oven to 160 degrees celsius and line a baking tray with baking paper.

Beat butter, icing sugar and vanilla essence together.
Sift flours and icing sugar and add to the butter mixture.
Beat on slow speed until a ball of dough forms.
Lightly flour hands, and form small balls of dough.
Place on tray and flatten with the back of a fork slightly.
Bake for 15 minutes, until cooked through.
Let cool completely on the tray.
While biscuits are cooling, make the filling.
Beat together the butter, icing sugar and jam.
Beat in the food colouring.
Once biscuits are cool, spread one biscuit with filling and press together with another biscuit.
