Valentine's Day Special - Chocolate Heart Puddings

Make these even if you're not celebrating valentines day. They're a real winner with anyone that eats them! They're also good the next day if you can't eat all of it at once. Just cover and leave in the fridge.
 
[Makes enough for 2 puddings]
You Will Need..
Place 50 of the dark chocolate and the butter in a saucepan and stir over low heat until melted. Remove from heat and allow to cool slightly.
Use an electric mixer to beat the egg yolks and 1/2 of the sugar until light and fluffy.
Add the melted chocolate mixture, almond meal, flour and cocoa. Fold in gently until combined.
In a separate bowl, use a clean electric mixer to beat eggwhites.
Add the remaining sugar, beating until firm peaks form.
Fold the eggwhite through the chocolate mixture gently until combined.
Divide mixture evenly among your 2 moulds.
Place them in a baking dish and pour enough boiling water into the dish to reach halfway up the sides of the moulds.
Bake for about 30 minutes or until a skewer inserted into the middle comes out clean.
While your puddings are cooking, melt the white chocolate.
Spread it evenly over a tray lined with baking paper and chill until firm.
Use a small heart shaped cutter to cut out heart shapes from the chocolate.
If you chill it for too long, just let it come back to room temperature abit so that it doesn't crack while you're trying to cute out your shapes.
Keep in the fridge until ready to serve.
Melt the remaining chocolate and coffee in a bowl over a pan of simmering water. Stir until chocolate is melted and sauce is well combined.
Invert your puddings onto plates.
Pour the sauce over the top.
Place a chocolate heart on top.
The chocolate heart will melt slightly into the sauce.

Valentine's Day Special - Sweets For My Sweet(heart)

My nanna used to make biscuits like this all the time.. I recommend you make them as well. Printable Here
You Will Need..
Line a baking tray with baking paper and pre heat your oven to 160 degrees celsius.
In your mixer, put the egg yolk, butter, sugar and vanilla essence.
Mix together until creamy.
Add the flour and mix together to form a dough.
Roll into balls and place onto your prelined baking tray.
Slightly flatten each ball. It's ok if they're not perfect. I think it adds a bit of rustic charm!
Gently place your heart cutter into the centre of the cookie and press down without going all the way to the bottom.
Use a spoon to scoop out the middles leaving some dough behind, creating a heart hole well in the middle of the biscuit.
Spoon a teaspoon of jam into each heart. You can use any flavour jam you want, I'm just a bit of a jam snob and will only eat strawberry. Plus, it looks nice as a red heart.
Place in the oven for roughly 10-15 minutes until slightly golden. It's ok if some of the jam leaks, you can just peel it off the sides when it has cooled down.
Leave to cool and firm on the tray.

Recipe of The Week - Valentine Scones

Valentines day is next weekend, so why not make your loved one some scones for a sweet afternoon treat. Printable Here

You Will Need...
Preheat your oven to 200 degrees celsius, and line a baking tray with baking paper.Place flour, salt & butter in a bowl.
Mix in with your fingertips until it resembles fine breadcrumbs.Make a well in the centre and add about 3/4 of the milk. (You might not need the whole cup, just wait and see) Mix together to form a dough.Knead lightly on a floured surface, and then roll out.Cut out your shapes and place on a baking tray lined with paper.Bake for about 15 minutes until scones are just starting to get some colour.Wrap in your sweetest tea towel straight away.
These are best served warm spread with jam and cream, or even just a bit of melted butter. The perfect afternoon snack.
You can make these with any kind of cutter for a quick and easy afternoon snack. You can also add dried fruits like dates or sultanas - if you like them.
